If you don’t have leftover chicken breasts or thighs on hand, you can use budget-friendly rotisserie chicken. Zucchini and red bell peppers give the soup a boost of fresh veggies, and you might already have canned crushed tomatoes and chili peppers in your pantry.

Indian Butter Chicken-Inspired Stew

Chicken thighs yield dark, flavorful, juicy meat and tend to cost less than chicken breasts. They are the star of this recipe and are simmered in a rich tomato and butter sauce, inspired by the Indian curry dish.

Two-Step Salsa Chili
