  • 1 tbsp Light Olive Oil
  • 1 fruit without skin and seeds California Avocados
  • 1 1/2 cup, chopped Zucchini
  • 1/2 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
  • 1 14 oz Crushed Tomatoes (Canned)
  • 1/2 tsp Salt
  • 1/2 medium (2-1/2" dia) Onions
  • 3/4 tsp Chili Powder
  • 1 each Chipotle Peppers in Adobo Sauce
  • 1 tsp, leaves Oregano
  • 1 tsp Garlic
  • 4 cup Chicken Broth, Bouillon or Consomme
  • 4 oz Green Chili Peppers (Canned)
  • 1/4 cup Cilantro (Coriander)
  • 2 cup, cooked, diced Chicken Breast
  • 1 fl oz Fresh Lime Juice
  • 1/2 cup, shredded Monterey Jack Cheese


  1. In a 2-quart soup pot, heat 1 tablespoon oil over medium-high heat.  Add the yellow onions and garlic.  Sauté for 2-3 minutes until onions are transluscent.   
  2. Add the red bell pepper and zucchini; sauté for 2 minutes then add the chili powder, chipotle pepper, oregano, and salt.  Cook for 1 additional minute until fragrant. 
  3. Add the tomatoes, chicken broth, jalapenos, and shredded chicken.  Cook uncovered for 15 minutes, add the cilantro and continue to cook for another 5 minutes.  Remove from heat and add lime juice; season with salt and freshly ground black pepper.  
  4. Serve with diced avocado (1/4 per serving), 2 tablespoons cheese and additional cilantro if desired.  Makes six 1 1/2 cup servings.  Optional for Phase 2:  add crumbled low-carb tortilla strips or chips as a garnish.  Don't forget to add the additional Net Carbs to the total for the tortillas.

Cooking Tip

For a little extra flavor, add diced garlic when sautéeing the onions.
