Low Carb Ribboned Rainbow Carrot Salad

The Easter bunny loves carrots, and for a good reason. They are packed with antioxidants and vitamins and are rich in fiber. This rainbow carrot salad provides beautiful color for your Easter table, while arugula and radishes bring a fresh flavor. The salad is tossed with a tahini-lemon juice dressing, and pistachios add crunch.

Keto Hasselback Ham

“Hasselback” refers to slicing food, so the cuts don’t go through. This technique enhances the dish’s visual appeal and helps with even cooking. In this unique and colorful variation of an Easter ham, a spinach and cream cheese mixture is layered between ham, sliced tomatoes, and layers of melty Gruyere cheese and drizzled with a melted butter-shallot sauce.
