Keto Double Chocolate Cookies Recipe

0 1/4 tsp BAKING SODA
1 tsp Vanilla Extract
0 1/4 cup XYLITOL
1 large Egg (Whole)
1 1/2 cup BLANCHED ALMOND FLOUR
2 tbsp Cocoa Powder (Unsweetened)
3 pack Endulge Chocolate Candies
0 1/4 cup Unsalted Butter Stick
0 1/4 tsp SALT
DIRECTIONSThis recipe is suitable for all phases except for the first two weeks of Induction due to the nuts. 1 cookie = 1 serving.
- Preheat an oven to 350°F. Use a silpat mat or parchment paper on the cookie sheet.
- Beat the softened butter with the xylitol until light and fluffy; about 3 minues. Add the vanilla and egg and beat until combined.
- Combine all the remaining dry ingredients except the candies, stir to blend and then add to the wet ingredients. Blend until fully incorporated then add the candies.
- Form into 18 x 1-inch balls, spacing 1-inch apart and flatten slightly on the prepared cookie sheet. Bake for 10 minutes, remove from oven and allow to sit for 5 minutes then move to a cooling rack. Cookies may be stored in an airtight container at room temperature for up to 2 days.
