INGREDIENTS

  • 1/4 cup Unsalted Butter Stick
  • 1/4 cup Xylitol
  • 1 tsp Vanilla Extract
  • 1 large Egg (Whole)
  • 1 1/2 cup Blanched Almond Flour
  • 2 tbsp Cocoa Powder (Unsweetened)
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 3 pack Endulge Chocolate Candies

DIRECTIONS

This recipe is suitable for all phases except for the first two weeks of Induction due to the nuts.  1 cookie = 1 serving.    
 
  1. Preheat an oven to 350°F.  Use a silpat mat or parchment paper on the cookie sheet.  
  2. Beat the softened butter with the xylitol until light and fluffy; about 3 minues.  Add the vanilla and egg and beat until combined.  
  3. Combine all the remaining dry ingredients except the candies, stir to blend and then add to the wet ingredients.   Blend until fully incorporated then add the candies. 
  4. Form into 18 x 1-inch balls, spacing 1-inch apart and flatten slightly on the prepared cookie sheet.  Bake for 10 minutes, remove from oven and allow to sit for 5 minutes then move to a cooling rack.  Cookies may be stored in an airtight container at room temperature for up to 2 days.
