INGREDIENTS

  • 2 cup, sliced Nopales
  • 1 cup Trader Joe's Fire Roasted Red Peppers
  • 4 cup Arugula Lettuce
  • 0 1/2 cup, sliced Red Onions
  • 10 sprig Cilantro
  • 4 tbsp Red Wine Vinegar
  • 4 tablespoon Extra Virgin Olive Oil

DIRECTIONS

Nopales, the fleshy leaves of a prickly pear cactus, are available in cans in the ethnic foods section of most supermarkets. The term julienne refers to thin matchstick-like strips. Serve Roasted Chicken Legs with Avocado-Tomatillo Salsa over this salad for a zesty one-dish meal.

 

  1. Combine the sliced nopales, julienned red peppers, arugula, thinly sliced red onion, chopped cilantro, vinegar and oil and toss; season with salt and pepper.
