×INGREDIENTS
-
6 Tbsp tap water
-
0 1/4 cup truvia, sweet completed granulated sweetener
-
0 1/4 cup fresh basil
-
12 ea fresh basil, leaf
-
8 fl oz gin
-
0 1/2 cup lime juice, 100%, fresh squeezed
-
8 cup municipal tap ice cubes
-
12 fl oz zero sugar ginger beer, Reed's
DIRECTIONS
- In a small saucepan over medium heat, combine water and sweetener until sweetener is mostly dissolved, about 3 minutes. Add ¼ cup fresh basil leaves and bring to a simmer. Remove from heat, cover and allow to steep for 30 minutes. Strain into a clean jar through a fine mesh strainer and cool basil simple syrup to room temperature.
- To assemble each cocktail, place 4 fresh basil leaves at the bottom of a cocktail shaker and muddle. Pour in 2 ounces gin, 1 ounce basil simple syrup (from step one), 1 ounce lime juice and fill the shaker ¾ full with ice. Cover with the lid and shake for at least 15 seconds, until the exterior of the shaker is very cold. Strain into a 12-ounce or larger glass, top with zero sugar ginger beer, and fill with ice. Garnish with lime slices and cucumber if desired.
Cooking Tip
Muddling is a technique frequently used in cocktail making where you lightly crush fruit, herbs or spices to release their oils and allow them to blend with the alcohol for a richer, more complex flavor. A variety of tools can be used to press firmly, twist and then let go of the basil including a muddling tool, or the handle of a wood spoon. Note that you just want to muddle until the basil releases its perfume, but you don’t want to shred the leaves. So use a gentle hand for this cocktail and enjoy the results!
