INGREDIENTS

  • 8 ounces Atkins Vanilla Latte Shake
  • 0 1/4 cup Heavy Cream, liquid
  • 0 1/2 tsp Espresso, instant powder
  • 0 1/4 tsp Xanthan Gum
  • 2 ml Liquid Monkfruit Extract (3 drops= 0.2 ml)

DIRECTIONS

  1. In a blender, combine Atkins Vanilla Latte Shake with all other ingredients on high speed, stopping to scrape down the sides at least once to ensure all ingredients are well mixed.
  2. Pour into popsicle molds and freeze for at least 3 hours, or until solid. This will make 2 3-ounce popsicles, of which one popsicle is one serving.
