INGREDIENTS

  • 3 oz, raw (yield after cooking) Pork Sausage Patty or Link
  • 2 large Egg (Whole)
  • 0 1/2 avocado, NS as to Florida or California Avocados
  • 0 1/2 medium whole (2-3/5" dia) Red Tomatoes

DIRECTIONS

  1. Form non-link sausage into a patty and cook over medium-high heat in a skillet, or if linked cook until no longer pink in the center; about 5 minutes. Cook alone or with the eggs.
  2. Prepare eggs as desired by poaching, frying, scrambling or as an omelet.
  3. Place eggs over sliced tomato and avocado (or use as filling and make an omelet).
  4. Serve with sausage.
