INGREDIENTS

  • 3 fruit Kiwi, fresh
  • 18 medium (1-1/4" dia) Strawberries, fresh
  • 16 Tbsp Lily's Sugar Free Chocolate Chips
  • 0 2/3 cup Heavy Cream
  • 0 1/2 fl oz (no ice) Cognac

  1. Make low carb cake of choice.  For this recipe the following recipes work well:  Chocolate-Ginger Cake, Spiced Snack Cake or the cupcake portion of the Strawberries and Cream Cupcakes.  Cut low-carb cake into 1-inch pieces, leave strawberries whole and skin the kiwis and cut into 12-15 chunks.  
  2. In a saucepan, combine chocolate and cream and cook over medium-low heat, stirring, until chocolate has melted. Stir in cognac and pour the mixture into a fondue pot set over a low flame.
  3. Using fondue forks, spear fruit and cake and dip into chocolate. If the chocolate begins to bubble, it is too hot; turn heat lower or extinguish flames for a few minutes.
