Cooking tip: We use the time saver of packaged fresh broccoli slaw mix that can be found in most grocery stores for this recipe. If prepackaged slaw mix is not available to you, mix 1 cup small broccoli florets, 1 cup peeled and thinly sliced or julienned broccoli stalk, 1 cup thinly sliced red cabbage, and ¼ cup thinly sliced or julienned carrot. This slaw is great when served immediately, but if given 30 minutes or so in the refrigerator before serving, the flavors meld for an especially delicious result.
Ingredients:
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon sugar free maple flavor syrup
- 1/8 teaspoon table salt
- 1/8 teaspoon ground black pepper
- 12 ounces fresh broccoli slaw salad mix
- 1/4 cup (28g) sliced fresh red onion
- 1/4 cup sliced almonds
Directions:
- In a small bowl, whisk together mayonnaise, vinegar, mustard, maple flavored syrup, salt and pepper until creamy and completely mixed.
- In a medium bowl, toss together broccoli slaw salad mix and thinly sliced red onion until evenly distributed. Pour mayonnaise dressing over and fold together until slaw is evenly coated. Fold in half of the sliced almonds, garnish with remaining sliced almonds and serve. One serving is about 1 cup.
