When fresh peaches are not available, unsweetened frozen peaches work in this recipe. Weigh out the frozen peaches (77 g) and then cut them into 1/4-inch slices before using.
Ingredients:
- 1/2 cup (77g) fresh peach slices
 - 1/2 cup whole milk ricotta cheese
 - 1 tablespoon sugar free maple flavor syrup
 - 2 slices keto bread (1 net carb per slice)
 - 12 leaves fresh basil
 - 1/2 teaspoon balsamic vinegar
 - 4 sprigs fresh thyme (about 1/2 teaspoon)
 - 2 pinches coarse kosher salt
 
Directions:
- Heat gas grill over medium flame or grill pan over medium heat. Spray thin layer of oil on grates or pan.
 - Slice peach into ¼-inch thick slices. Grill about 2 minutes per side, until beginning to caramelize and grill marks are visible. Set aside on a plate.
 - While peaches are grilling, in a small bowl combine ricotta and sugar free maple syrup until well combined.
 - Toast bread over the grill or in the grill pan until both sides are toasty and grill marks have formed, about 2 minutes for each side. Spread ¼ cup ricotta mixture on each piece of toast. Layer half the grilled peaches and half of the basil over ricotta on each piece of toast. Drizzle each toast with ¼ teaspoon balsamic, top with two sprigs fresh thyme and sprinkle each with a pinch of salt. One toast as described is one serving.
