Keto Chocolate Pecan Shortbread Drops Recipe

2 Tbsp Cream, heavy, liquid
0 3/4 cup(s) Soy flour, defatted (1 cup= 105g)
0 1/2 cup, chopped PECAN NUTS
3 tsp Baking Powder (Straight Phosphate, Double Acting)
1 large Egg (Whole)
3 Tbsp COCOA POWDER
0 1/2 cup Sucralose Based Sweetener (Sugar Substitute)
1 tsp Vanilla Extract
16 tablespoon Unsalted Butter Stick
- Preheat oven to 325°F.
- With an electric mixer, beat butter, sucralose and stevia on medium speed until light and fluffy, about 4 minutes. Turn speed to low and add egg, cream, vanilla extract and 1 tsp chocolate extract (optional). Scrape bowl down, and then add soy flour, baking powder, cocoa powder and pecans, mixing until just combined.
- Drop dough by heaping teaspoonfuls onto ungreased baking sheets. Bake 12 to 14 minutes, until cookies are set. Cool on sheets 1 minute before transferring to wire racks to cool completely.
