Ranch Chip Chicken Patties and Salad

Ingredients:

  • 3 bags Atkins Ranch Protein Chips
  • 3 tablespoons fresh chives USDA
  • 1/4 cup fresh scallions, tops & bulb, chopped USDA
  • 16 ounces ground chicken FNDDS
  • 1 lrg raw egg USDA
  • 6 cups fresh spring mix lettuce Canadian Nutrient File
  • 1 svg avocado oil, spray Cadia
  • 2 ounces fresh grape tomatoes, 04063 Inland Premium Packers

Directions:

  1. In a large bowl, break up one bag of Atkins Ranch Protein Chips into small pieces. Add ground chicken, scallions, and 2 tablespoons chives. Lightly whisk the egg and add it to the bowl. Mix until evenly combined.
  2. Divide into 4 even patties (about 5 ounces each). Spray a large non-stick skillet with avocado oil and heat over medium heat. Cook chicken patties until first side is browned, about 3 minutes. Flip patties and cover the skillet, cooking another 3 minutes, or until browned and cooked through (reaching an internal temperature of 165°F).
  3. Plate each patty with garnish of remaining chives, alongside 1 ½ cups spring greens topped with ½-ounce halved grape tomatoes (about 1 ½ grape tomatoes for each serving), and half a bag of Atkins Ranch Protein Chips. 
Serve with Keto Ranch Dressing if desired.
