The first step of sautéing may seem unimportant for a slow cooker recipe, but in this case, cooking those specific ingredients helps to deepen the flavor, resulting in a slow cooker meal that doesn’t compromise on taste.
Ingredients:
- 3 tablespoons unsalted butter
- 1 medium (110g) yellow onion, chopped
- 2 tablespoons grated fresh ginger
- 1 1/2 teaspoons minced or pressed garlic
- 1 tablespoon garam masala spice blend
- 1 tablespoon tomato paste
- 3/4 teaspoon salt
- 3/4 cup chicken broth
- 1/2 cup canned crushed tomatoes
- 1 tablespoon lime juice
- 1/2 teaspoon lime zest
- 1 packet stevia extract sweetener
- 2 pounds raw boneless, skinless chicken thighs
- 1/2 cup heavy cream
- 2 tablespoons cilantro leaves
- 4 1/2 cups frozen cauliflower rice
Directions:
- In a medium skillet over medium heat, melt the butter. Add chopped onion and sauté stirring regularly until becoming translucent, about 3 minutes. Add ginger and garlic, sautéing until fragrant, about 1 minute. Mix in garam masala, tomato paste and salt, stirring until fully incorporated and fragrant, another minute. Scrape into the bottom of a slow cooker.
- Pour chicken broth, canned crushed tomatoes, lime juice, lime zest and stevia into the slow cooker and stir to combine. Cut chicken thighs into 1-inch cubes and add to the slow cooker. Cook on low for 3 hours then set the lid somewhat askew so that the liquid can reduce some, cooking for one hour more, until chicken is cooked through.
- Before serving, stir cream into the slow cooker and garnish with fresh cilantro. Warm cauliflower rice as instructed on the package. One serving is 1/2 cup cooked cauliflower rice with about 3/4 cup butter chicken.
