Nacho Chili Air Fryer Zucchini Fries
Cooking tip: No Air Fryer? No problem. Bake in a 400°F oven for 15-20 minutes, turning once halfway through the cook time.

Ingredients:

  • 1 bag Atkins Nacho Cheese Protein Chips
  • 1/2 teaspoon table salt USDA
  • 1/2 teaspoon black pepper, ground USDA
  • 1/2 cup parmesan cheese, grated USDA
  • 1 teaspoon chili powder, 036800328198, organic Red Monkey
  • 2 1/2 tablespoons canola oil USDA
  • 1/4 cup almond flour, super finely ground, gluten free King Arthur Flour
  • 1 lrg raw egg USDA
  • 2 meds fresh zucchini, with skin USDA

Directions:

  1. In a small food processor, crush Atkins Nacho Cheese Protein Chips into fine crumbs. Add parmesan, almond flour, chili powder, salt and pepper and process until well combined. Place in a flat bottom dish.
  2. In a small flat bottom bowl, beat the egg.
  3. Cut the zucchini into fries (about 30 pieces no thicker than ½-inch). Dip zucchini pieces in egg, then coat in the chip coating. Place on a baking sheet and spray evenly with canola oil.
  4. Heat air fryer to 390°F. Working in batches to make sure the air fryer is not overcrowded and there is a little space between each zucchini piece, air fry for 5 minutes, or until coating is browned and crispy. Gently remove and serve while warm. Each serving is 6 zucchini fries.
These are delicious served with ranch dressing! Use the recipe at this link and add 0.6 net carbs for 2 tablespoons dressing.
