Ingredients:

For the chia pudding
  • 3/4 cup unsweetened almond milk
  • 2 tablespoons sugar free maple flavored syrup
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • 3 tablespoons chia seeds
For the bowls

Directions:

  1. In a small bowl, combine almond milk, sugar free maple flavored syrup, lemon juice, 1/2 teaspoon lemon zest, vanilla and salt until well combined. Add chia seeds and mix well. Cover and refrigerate at least 1 hour.
  2. Divide lemon chia pudding between two small bowls, about ½ cup in each. Into each bowl add 1/3 cup cottage cheese, 1/2 of the chopped Atkins Lemon Poppyseed Soft Baked Protein Bar, 2 tablespoons fresh blueberries, and a pinch of lemon zest. One serving is one bowl as described.
