Ingredients:
For the chia pudding
- 3/4 cup unsweetened almond milk
- 2 tablespoons sugar free maple flavored syrup
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
- Pinch salt
- 3 tablespoons chia seeds
For the bowls
- 2/3 cup 4% milk fat cottage cheese
- 1 Atkins Lemon Poppyseed Soft Baked Protein Bar, chopped
- 1/4 cup (37g) fresh blueberries
- 1/4 teaspoon lemon zest (optional garnish)
Directions:
- In a small bowl, combine almond milk, sugar free maple flavored syrup, lemon juice, 1/2 teaspoon lemon zest, vanilla and salt until well combined. Add chia seeds and mix well. Cover and refrigerate at least 1 hour.
- Divide lemon chia pudding between two small bowls, about ½ cup in each. Into each bowl add 1/3 cup cottage cheese, 1/2 of the chopped Atkins Lemon Poppyseed Soft Baked Protein Bar, 2 tablespoons fresh blueberries, and a pinch of lemon zest. One serving is one bowl as described.
