INGREDIENTS

  • 5 oz Lamb Cubed For Stew or Kabob (Lean Only, Trimmed to 1/4" Fat)
  • 1 cup cubed Eggplant
  • 0.5 small Red Onions
  • 1 small Sweet Red Peppers

DIRECTIONS

  1. Preheat grill and soak two bamboo skewers in warm water for at least 20 minutes.
  2. Alternate the lamb cubes, eggplant, onion and bell pepper on the skewers. Coat lightly with olive oil spray or brush lightly with olive oil.  Season with salt and freshly ground pepper.
  3. Grill, turning 3-4 times until the lamb is cooked to desired doneness and vegetables are tender, about 10 minutes.
