This dip is garlic forward, so feel free to reduce that aspect or use roasted garlic if you are garlic sensitive. Along those lines, consider swapping the basil and thyme for your favorite fresh garden herbs for a unique flavor all your own.

Ingredients:

  • 1/2 cup (57g) frozen cauliflower rice
  • 1 cup (226g) whole milk cottage cheese
  • 2 tablespoons (5g) chopped fresh basil
  • 2 teaspoons (5g) roughly chopped fresh garlic
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon fresh thyme
  • 1/8 teaspoon black pepper

Directions:

  1. In a small microwave safe bowl, microwave frozen cauliflower rice until completely thawed and most of the moisture has evaporated, about 2 minutes.
  2. In a food processor whip together cauliflower rice, cottage cheese, basil, garlic, lemon juice, , and thyme until well combined and very creamy, about 2 minutes. Taste and add salt if desired. Scrape into a bowl and garnish with a pinch of fresh thyme, some tiny basil leaves and the black pepper. One serving is about ¼ cup dip.
We loved this dip with snap peas (1/4 cup or 21g= 1.5g net carbs), cucumber slices (1/4 cup or 30g= 0.86g net carbs), red bell pepper squares (1/4 cup or 23g= 0.93g net carbs), and radish slices (1/4 cup or 29g= 0.53g net carbs).
