Ingredients:
- 1 /4 cup Organic High Fiber Coconut Flour
- 1/2 cup Almond Meal Flour
- 6 teaspoons Sweetener
- 1/2 cup Organic High Fiber Coconut Flour
- 1/8 teaspoon Cinnamon
- 1 dash Salt
- 3 teaspoons Sweetener
- 1 tablespoon Vanilla Extract
- 3 tablespoons Butter
- 4 large Eggs (Whole)
- 1/2 cup Lemon Juice
Directions:
For this recipe use Truvia© sweetener.
1. Preheat oven to 350 degrees. Line an 8-inch square baking dish with parchment paper.
2. Make the crust: In a large bowl combine almond meal, 1/2 cup coconut flour, cinnamon, salt and 1 Tbsp sweetener. Add melted butter and vanilla extract. Combine all ingredients together and press the dough evenly into the bottom of the prepared baking dish. Bake for 10 minutes until lightly golden around the edges. Remove from oven and set aside.
3. Make the filling: Stir 1/4 cup coconut flour and 2 Tbsp sweetener together. Whisk in eggs, and lemon juice.
4. Pour filling into crust and bake for 10-15 minutes until golden around the edges.
5. Let cool at room temperature then refrigerate for a minimum of 2 hours then cut into squares.
