INGREDIENTS

  • 3 each Atkins Dark Chocolate Decadence Bar
  • 1/2 cup Almond Meal Flour
  • 1 tbsp Organic Virgin Coconut Oil
  • 1 cup Heavy Cream
  • 8 piece Starlight Mints, sugar-free
  • 8 serving Easy Peppermint Ice Cream

DIRECTIONS

Use the Atkins recipe to make Easy Peppermint Ice Cream; you will need 1 full recipe (about 3 cups).  Please note, you can use vanilla sugar free ice cream instead of the Easy Peppermint Ice Cream but it will add about 5g NC to each serving.  If you choose to do this you will need 12 mints (crushed) - add half of them to the ice cream mixture and the other half to the top.  

 
  1. Allow the ice cream to sit at room temperature for about 20 minutes to soften.
  2. Chop the Atkins Dark Chocolate Decadence bars into 1 inch pieces.  Place in a food processor and process until it resembles fine crumbs.  Add the coconut oil and almond meal and process until combined.  Press into a pie place and place in the freezer while preparing the rest of the filling.
  3. Whip heavy cream to firm peaks.  Fold together the softened ice cream with the whipped cream and pour into the prepared pie shell.  Sprinkle crushed peppermint candies on the top and place in the freezer until fully set (about 1 hour).
