Ingredients:
- 6 ounces Chicken Breast Filet, skinless
- 2 tablespoons Parmesan Cheese, grated
- 5 ounces Fresh Express Baby Kale, Chard, Spinach mix
Directions:
Use the Atkins recipe to make Caesar Salad Dressing.
- Season chicken with salt and freshly ground black pepper. Grill or pan fry chicken until no longer pink in the center and the juices run clear. Cut into 1/2-inch strips and set aside.
- Prepare kale by rinsing with water and drying well on a paper towel. Strip leaves from the tough stem (if necessary and break into small pieces. Toss with dressing.
- Place chicken on kale and serve with freshly grated Parmesan.
