Keto Zucchini Ribbons with Lemon and Parmesan

Ingredients:

  • 3 tablespoons Parmesan Cheese (Grated)
  • 1 1/2 tablespoons Extra Virgin Olive Oil
  • 1/2 fluid ounce Fresh Lemon Juice
  • 2 medium Zucchinis
  • 1 teaspoon Lemon Peel

Directions:

  1. Juice and zest the lemon. Combine zucchini, Parmesan, lemon juice, lemon zest and olive oil in a mixing bowl.
  2. Gently toss, season to taste with salt and freshly ground black pepper and serve.
