Ingredients:
- 18 whole each Mushroom Pieces and Stems
- 2 medium (approx 2-3/4" long, 2-1/2" diameter) Red Sweet Pepper
- 1/2 teaspoon Salt
- 3 tablespoons Extra Virgin Olive Oil
- 1/2 teaspoon Black Pepper
- 1 teaspoon leaf Dried Thyme Leaves
- 2 medium Zucchinis
Directions:
Soak wooden skewers for 30 minutes before using to avoid burning or use metal strewers.
- Combine oil, thyme, salt, and pepper in a very large bowl or 2 gallon resealable bag.
- Add vegetables, toss to coat. Marinate 30 minutes. Thread vegetables on 6 metal skewers.
- Grill over medium heat 15 minutes, turning occasionally, until vegetables are crisp-tender and have grill marks.
