Ingredients:
- 1 small Red Onion
- 6 ounces boneless, cooked Fresh Ham
- 1/4 teaspoon Black Pepper
- 4 medium slice (yield after cooking) Bacon
- 1/2 teaspoon leaf Dried Thyme Leaves
- 1/2 cup, grated Carrots
- 10 ounces Cauliflower
Directions:
- In a large nonstick skillet, over medium heat, cook the bacon until browned. Remove and set aside on a paper towel. Add grated carrot and chopped onion and cook for 4 minutes until they begin to soften.
- Cut bacon into small pieces and add to carrot and onion. Increase heat to medium high and add the cauliflower, ham and thyme. Spread the mixture evenly in the pan, season with salt and freshly ground black pepper, and cook for another 10 minutes, stirring once until the mixture browns. Serve immediately.
