Ingredients:

  • 3 cups (321g) cauliflower
  • 2 tablespoons unsalted butter
  • 1 small white onion (70g)
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 pound (16 ounces) cooked turkey meat
  • 1/4 cup heavy cream

Directions:

This recipe is terrific for utilizing leftover Thanksgiving turkey meat.
  1. Bring a medium pot of salted water to boil. Add cauliflower; cook until just tender, about 4 minutes. Drain, cool under cold water, drain again, and coarsely chop. 
  2. Meanwhile, melt butter in a large nonstick skillet over medium heat. Add white onion, thyme, salt, and pepper; cook until soft and light brown, about 6 minutes. Add cauliflower and cook 2 minutes longer. 
  3. Increase heat to high. Add turkey and continue to cook, stirring occasionally, until well browned, about 6 minutes. Add cream and cook until almost dry, about 2 minutes. Serve warm. Top with an egg if desired (optional).
