INGREDIENTS

  • 10 beans (4" long) Green Snap Beans
  • 6 oz Trout (Mixed Species)
  • 1 tbsp Butter
  • 1 tbsp Parsley

DIRECTIONS

Use 1 tablespoon of any compound butter or use the Atkins recipe for Herb-Butter Blend.

  1. Preheat oven to 375°F.
  2. Place trout, beans and Herb-Butter Blend or butter mashed with minced parsley seasoned with salt and pepper on a 12- by 12-inch piece of aluminum foil.  Bring the edges together at the top and crimp to form a sealed packet.
  3. Place packet onto a cookie sheet and bake for 10-15 minutes or until fish is cooked through and beans are tender.
