Ingredients:
- 1/2 cup canola oil
- 1/4 cup fresh chopped cilantro
- 1 1/2 fluid ounces tequila
- 1 1/2 tablespoons ground cumin
- 1 tablespoon fresh minced or pressed garlic
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 32 ounce raw chicken breast
- 1/4 cup unsalted butter
Directions:
- Heat oven 400°F.
- In a large bowl, combine oil, cilantro, tequila, cumin, minced or pressed garlic, salt, pepper and cayenne. Add chicken and toss to coat.
- Transfer chicken to a baking sheet. Bake 15 to 20 minutes, or until largest piece is cooked through with an internal temperature of 165°F.
- Remove from oven and top each breast with 1/2 tablespoon butter and let melt.
