INGREDIENTS

  • 0 1/4 cup fresh cilantro, leaves
  • 3 Tbsp canola oil
  • 1 1/2 fl oz tequila
  • 1 1/2 Tbsp ground cumin, 036800328228, organic
  • 1 Tbsp fresh garlic
  • 1 tsp table salt
  • 0 1/2 tsp black pepper, ground
  • 0 1/8 tsp dried cayenne chili pepper, ground
  • 32 oz raw chicken breast, skinless, boneless
  • 2 Tbsp butter, unsalted

DIRECTIONS

  1. Heat oven 400°F.
  2. In a large bowl, combine chopped cilantro, oil, tequila, cumin, minced or pressed garlic, salt, pepper and cayenne. Add chicken and toss to coat.
  3. Transfer chicken to a baking sheet. Bake 15 to 20 minutes, or until largest piece is cooked through with an internal temperature of 165°F.
  4. Remove from oven and top each breast with 1/2 tablespoon butter and let melt.
