Keto Tequila Chicken

Ingredients:

  • 1/2 teaspoon Black Pepper
  • 1/8 teaspoon Red or Cayenne Pepper
  • 1 1/2 tablespoons Cumin
  • 3 teaspoons Garlic
  • 1/4 cup Unsalted Butter Stick
  • 1/4 cup Cilantro (Coriander)
  • 1 1/2 fluid ounce (no ice) Tequila
  • 32 ounce raw (yield after cooking, bone removed) Chicken Breast
  • 1 teaspoon Salt
  • 1/2 cup Canola Oil

Directions:

  1. Heat oven 400°F.
  2. In a large bowl, combine chopped cilantro, oil, tequila, cumin, minced or pressed garlic, salt, pepper and cayenne. Add chicken and toss to coat.
  3. Transfer chicken to a baking sheet. Bake 15 to 20 minutes, or until largest piece is cooked through with an internal temperature of 165°F.
  4. Remove from oven and top each breast with 1/2 tablespoon butter and let melt.
