String Bean and Snow Pea Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1 tablespoon White Wine Vinegar
  • 1/2 teaspoon Salt
  • 5 1/4 ounces Snowpeas (Pea Pod)
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 1/3 pound Green Snap Beans
  • 1/2 teaspoon leaf Tarragon

Directions:

  1.  Steam string beans in a steamer basket in a medium pot over boiling lightly salted water 3-4 minutes until crisp-tender. Add snow peas during the last minute of cooking time.
  2.  Drain and place in serving dish. Add oil, vinegar, salt, sugar substitute and tarragon. Toss to coat vegetables evenly and serve warm. Or refrigerate for at least 1 hour and serve chilled.
