Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 1 tablespoon White Wine Vinegar
- 1/2 teaspoon Salt
- 5 1/4 ounces Snowpeas (Pea Pod)
- 2 tablespoons Extra Virgin Olive Oil
- 1/2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
- 1/3 pound Green Snap Beans
- 1/2 teaspoon leaf Tarragon
Directions:
- Steam string beans in a steamer basket in a medium pot over boiling lightly salted water 3-4 minutes until crisp-tender. Add snow peas during the last minute of cooking time.
- Drain and place in serving dish. Add oil, vinegar, salt, sugar substitute and tarragon. Toss to coat vegetables evenly and serve warm. Or refrigerate for at least 1 hour and serve chilled.
