Ingredients:
- 8 leaves Radicchio
- 1 small whole (2-2/5" diameter) Red Tomato
- 8 medium slice (yield after cooking) Bacon
- 3 tablespoons chopped Scallions or Spring Onions
- 1 tablespoon Fresh Lime Juice
- 1/2 cup Real Mayonnaise
- 3 teaspoons Sriracha Hot Chili Sauce
- 1 pound Turkey Breast Meat (Fryer-Roasters, Cooked, Roasted)
- 1/2 teaspoon Garlic
Directions:
1. Cook bacon, set aside on a paper towel to cool. While bacon is cooking, combine mayonnaise, scallions, lime juice, chili sauce (to taste), minced garlic, salt and pepper to taste in a small bowl.
2. To assemble: Spread bread slices with mayonnaise. Lay 2-3 turkey slices on top of 4 bread slices and top with radicchio leaf, tomato slice and bacon. Repeat layering once and then cover with the last 4 slices of bread.
3. Insert toothpicks to hold sandwiches in place before slicing. Serve immediately.
