Spicy Turkey Club

Ingredients:

  • 8 leaves Radicchio
  • 1 small whole (2-2/5" diameter) Red Tomato
  • 8 medium slice (yield after cooking) Bacon
  • 3 tablespoons chopped Scallions or Spring Onions
  • 1 tablespoon Fresh Lime Juice
  • 1/2 cup Real Mayonnaise
  • 3 teaspoons Sriracha Hot Chili Sauce
  • 1 pound Turkey Breast Meat (Fryer-Roasters, Cooked, Roasted)
  • 1/2 teaspoon Garlic

Directions:

1.  Cook bacon, set aside on a paper towel to cool.  While bacon is cooking, combine mayonnaise, scallions, lime juice, chili sauce (to taste), minced garlic, salt and pepper to taste in a small bowl.
2.  To assemble:  Spread bread slices with mayonnaise.  Lay 2-3 turkey slices on top of 4 bread slices and top with radicchio leaf, tomato slice and bacon.  Repeat layering once and then cover with the last 4 slices of bread.  
3.  Insert toothpicks to hold sandwiches in place before slicing.  Serve immediately.
