Ingredients:
- 8 tablespoons Sugar Free Strawberry Jam
- 2 cups Heavy Cream
- 3/4 cup Egg White
- 2 teaspoons Vanilla Extract
Directions:
- In a medium bowl combine heavy cream, and egg whites (these can be purchased pasteurized for safety). With an electric mixer on low speed, beat until combined. Increase speed to medium and beat until slightly increased in bulk, about 2 minutes. Blend in 2 tbsp of the jam and then pour mixture into ice cream maker. Process according to manufacturer's directions.
- Whisk 6 tbsp jam and vanilla extract together until smooth. Put one-third of ice cream into a shallow container.
- Drizzle one third of strawberry mixture over ice cream. Drag a knife through the jam in a zigzag pattern to create swirls. (Be careful not to over mix.) Repeat process two times with remaining ice cream and jam.
- Chill at least 1 hour or preferably overnight.
