Cooking tip: Leaving the meatballs undisturbed while cooking helps create a seared exterior that is important for the texture of turkey meatballs. Ground turkey can be a little finicky, developing an almost slimy texture if overworked, and keeping a very soft texture if not given the chance to sear in the skillet.
Savory and juicy, this protein packed turkey meatball skillet has more flavor than you would think possible in a simple recipe. We enjoyed this recipe piled into a bowl, but it can also be served over a bed of raw baby spinach (1 ½ cups= 1 g net carbs) or zucchini noodles (1 cup= 2.5 g net carbs) for a vegetable boost.
Ingredients:
- 1 large egg
- 2 tablespoons ground flaxseed meal
- 2 tablespoons finely minced fresh basil
- 1 teaspoon Italian seasoning blend
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon ground cayenne pepper
- ¼ teaspoon ground black pepper
- 1 pound 85% lean ground turkey
- 2 teaspoons olive oil
- 1 ½ cups no sugar added marinara sauce (look for one with 5 net carbs per ½ cup serving)
- 4 ounces burrata cheese
- 3 tablespoons thinly sliced fresh basil
- 1 pinch crushed red chili flakes
Directions:
Ingredient note: we suggest using 85% lean ground turkey for the best flavor.
- In a large bowl, lightly whisk together egg, flaxseed meal, minced fresh basil, Italian seasoning, Dijon mustard, salt, garlic powder, cayenne, and black pepper until well incorporated. Add ground turkey and gently mix until just combined- do not overwork. Form mixture into 16 even meatballs, a scant 2 tablespoons each.
- Warm a cast iron or heavy bottom skillet over medium high heat. Add 1 teaspoon olive oil and swirl to coat. Add half of the meatballs and cook undisturbed for 3 minutes, rotate meatballs, cook another 3 minutes, then turn once more, cooking for another 3 minutes, until meatballs are cooked through, reaching in internal temperature of 165°F. Place cooked meatballs on a plate, add remaining olive oil and repeat for remaining meatballs.
- Reduce heat to medium low, and add marinara sauce to the pan. Nestle cooked meatballs into the sauce. Slice burrata into 1 ounce pieces and intersperse among the meatballs. Warm until sauce is bubbling throughout the skillet and cheese is beginning to melt, about 5 minutes. Garnish with thinly sliced fresh basil and crushed red chili flakes, and serve while hot. One serving is 4 meatballs, one ounce burrata, and a heaping ¼ cup sauce.
