Cooking tip: Decadent pumpkin spice ice cream is the perfect end of summer treat that brings a favorite fall flavor with the cool bite of ice cream. We tested a variety of recipes using the Ninja CREAMi machine and found including cream cheese really helps create an ice cream texture, while Atkins shakes provide a wonderful rich flavor. Using this ice cream base, you can switch out the pumpkin and pumpkin spice if desired, just be sure to adjust the net carbs with any swaps for accurate tracking.
Ingredients:
- 1 tablespoon cream cheese
- 2 tablespoons Truvia sweet complete stevia-erythritol granulated sweetener
- 6 tablespoons canned pumpkin
- 1 teaspoon pumpkin pie spice blend
- 1 Atkins Creamy Vanilla Shake
Directions:
Equipment note: This recipe uses a Ninja Creami* machine. You will need one empty Creami pint along with the machine for this recipe.
- In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk the sweetener, into the warm cream cheese until it reaches a thick icing texture. Whisk in pumpkin and pumpkin pie spice until fully incorporated. Slowly whisk in Atkins Creamy Vanilla Shake, pour into the CREAMi pint, cover and freeze for 24 hours.
- Remove frozen pint, process using Ninja Creami on the lite ice cream setting, then follow up with a respin for the best texture. Two small scoops (one third of the pint) are one serving.
