Keto Soft Chocolate Swirl Ice Cream

Ingredients:

  • 4 ounces Sugar Free Chocolate Chips
  • 3/4 cup Egg White
  • 2 1/4 cups Heavy Cream

Directions:

  1. In a medium bowl combine mix, 2 cups heavy cream and egg whites. With electric mixer on low speed, beat until combined. Increase speed to medium and beat until slightly increased in bulk, about 2 minutes.
  2. Pour ice cream mix into ice cream maker. Process according to manufacturer's directions.
  3. Heat remaining 1/4 cup heavy cream and chocolate bars over moderate heat, stirring often until chocolate melted and mixture is smooth; set aside to cool 10 minutes. Place one-half of ice cream into a shallow container.
  4. Drizzle one-half of the chocolate mixture over ice cream. Drag a knife through the chocolate and ice cream in a zigzag pattern to swirl. (Be careful not to over mix.) Repeat with remaining ice cream and chocolate.
  5. Chill for at least an hour or preferably overnight.
