Snow Pea, Red Bell Pepper and Cabbage Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1 1/2 tablespoons Sodium and Sugar Free Rice Vinegar
  • 8 ounces Snowpeas (Pea Pod)
  • 1/2 individual packet Sucralose Based Sweetener (Sugar Substitute)
  • 3 large Scallions or Spring Onions
  • 1/2 pound Cabbage
  • 2 tablespoons Peppermint (Mint)
  • 1 teaspoon Salt
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Red Sweet Pepper

Directions:

  1. Mix olive oil, vinegar, salt and sugar substitute in a small bowl.
  2. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high 1 minute. Drain and slice lengthwise in thirds.
  3. Mix snow peas, shredded cabbage, thinly sliced red bell pepper, thinly sliced onion and mint in a large bowl. Add dressing; toss to coat.
  4. Chill 15 minutes to blend flavors.
