Ingredients:
- 1 1/2 tablespoons Sodium and Sugar Free Rice Vinegar
- 8 ounces Snowpeas (Pea Pod)
- 1/2 individual packet Sucralose Based Sweetener (Sugar Substitute)
- 3 large Scallions or Spring Onions
- 1/2 pound Cabbage
- 2 tablespoons Peppermint (Mint)
- 1 teaspoon Salt
- 2 tablespoons Extra Virgin Olive Oil
- 1 medium (approx 2-3/4" long, 2-1/2" diameter) Red Sweet Pepper
Directions:
- Mix olive oil, vinegar, salt and sugar substitute in a small bowl.
- Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high 1 minute. Drain and slice lengthwise in thirds.
- Mix snow peas, shredded cabbage, thinly sliced red bell pepper, thinly sliced onion and mint in a large bowl. Add dressing; toss to coat.
- Chill 15 minutes to blend flavors.
