4 large Hard-Boiled Egg
3 tbsp chopped Scallions or Spring Onions
6 oz, cooked SMOKED BEEF SAUSAGE
2 tbsp REAL MAYONNAISE
0 1/4 tsp Tabasco Sauce

Use the Atkins recipe to make Barbecue Sauce. Please note that the Barbecue Sauce recipe is a little high in NC for a Phase 1 recipe, in this case only 1 teaspoon is being used.
- Cut hard-boiled eggs in half lengthwise; put yolks in a small mixing bowl; set whites aside.
- Add mayonnaise to yolks and mash with a silicone spatula or fork until smooth.
- Fold in Tabasco, scallions and 1 tsp barbecue sauce (or to taste) then season to taste with salt and freshly ground black pepper.
- Fill each egg white half with the yolk mixture; top with sausage slices
