Ingredients:
- 1/2 fluid ounce Fresh Lemon Juice
- 1/2 teaspoon Salt
- 1 teaspoon Paprika
- 4 tablespoons Light Olive Oil
- 2 tablespoons Parsley
- 1/4 teaspoon Black Pepper
- 1 teaspoon leaf Dried Thyme Leaves
- 8 thigh, bone and skin removeds Chicken Thigh
Directions:
- Mix oil, lemon juice, chopped parsley, thyme, paprika, salt and pepper in a medium bowl and add chicken. Mix to coat pieces.
- Cover and marinate in refrigerator at least 2 hours, stirring occasionally. Prepare grill for barbecue or preheat broiler. Drain marinade into a small saucepan and boil for 3 minutes.
- Thread chicken pieces onto 8 long metal skewers, leaving 1/4-inch between pieces. Or if using wooden skewers soak them for 30 minutes before cooking with.
- Grill skewers over medium-hot coals or broil, turning once and brushing occasionally with marinade*, until tender and cooked through, about 10-12 minutes.*Do not brush with uncooked marinade (boil before brushing on cooking chicken).
