Cooking tip: If you've cooked the turkey yourself, use 2 cups of the drippings to replace the butter and chicken stock.

Ingredients:

  • 1/4 cup Unsalted Butter Stick
  • 1 3/4 cups Chicken Broth, Bouillon or Consomme
  • 1/2 cup Tap Water
  • 4 teaspoons Thick-It-Up

Directions:

  1. Pour turkey drippings into a gravy separator or glass measuring cup; drain off and discard as much excess fat as possible. Alternatively, use 1/4 cup butter and 1 3/4 cups chicken broth instead of turkey drippings so that you have a total of 2 cups.
  2. Pour into a small saucepan, add water and bring to a simmer. Whisk in xanthan until dissolved and thickened. Remove from heat and whisk in 1 tablespoon cream (optional).
  3. Taste, stir in salt and freshly ground black pepper if necessary and serve. Each serving is 2 tablespoons.
