Simple Roasted Squash

Ingredients:

  • 1/8 teaspoon Cinnamon, ground
  • 1/2 teaspoon Salt
  • 4 cup(s) Butternut squash, raw, cubed (1 cup= 140 g)
  • 1/8 teaspoon Nutmeg, ground
  • 1 1/2 tablespoons Butter, unsalted

Directions:

Ingredient note: Choose a roughly 1 ½ pound butternut squash to obtain 4 cups of raw cubed squash.
  1. Preheat oven to 425°.
  2. Peel, deseed, and cube squash. In a medium bowl, toss the squash with melted butter, salt, cinnamon, and nutmeg.
  3. Arrange in a single layer on a rimmed baking sheet, and roast for 15 minutes. Remove from the oven and toss the cubes for even roasting. Roast for another 8-10 minutes, or until tender. Serve warm; one serving is ½ cup of cooked cubed squash.
