Shrimp, Bacon and Avocado Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1/2 cup Jicama
  • 1/2 fruit without skin and seed California Avocados
  • 2 cup, shredded or choppeds Mixed Salad Greens
  • 12 medium Shrimp, raws
  • 2 medium slice (yield after cooking) Bacon

Directions:

Use the Atkins recipe and reserve bacon drippings to make the Hot Bacon Vinaigrette, you will need 2 tablespoons. 
  1. Place shrimp in steamer and steam until shrimp turn pink and curl up. This should take about 5 minutes once the water is boiling.
  2. Cook bacon slices on frying pan until crispy. Reserve drippings and make vinaigrette.  Cut bacon into bits. 
  3. Toss cooked shrimp, bacon bits, diced jicama, diced avocado and greens with the dressing.
