Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 1/2 cup Jicama
- 1/2 fruit without skin and seed California Avocados
- 2 cup, shredded or choppeds Mixed Salad Greens
- 12 medium Shrimp, raws
- 2 medium slice (yield after cooking) Bacon
Directions:
Use the Atkins recipe and reserve bacon drippings to make the Hot Bacon Vinaigrette, you will need 2 tablespoons.
- Place shrimp in steamer and steam until shrimp turn pink and curl up. This should take about 5 minutes once the water is boiling.
- Cook bacon slices on frying pan until crispy. Reserve drippings and make vinaigrette. Cut bacon into bits.
- Toss cooked shrimp, bacon bits, diced jicama, diced avocado and greens with the dressing.
