Keto Shrimp and Feta Stew
Cooking tip: Did you know that you can easily portion out and freeze soup to save for a busy night down the road? When ready to reheat, either microwave or heat up in a pot over the stove with a splash of water.

Ingredients:

  • 1 cup Diced Tomato
  • 4 ounces Feta Cheese
  • 1 pound Shrimp
  • 4 ounces Sauvignon Blanc Wine
  • 2 tablespoons Parsley
  • 1/2 small Onion
  • 1/2 teaspoon Salt
  • 2 cloves Garlic
  • 3 tablespoons Light Olive Oil
  • 1/2 teaspoon leaf Oregano

Directions:

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Sauté diced white onion 5 minutes, until soft. Add minced garlic and cook 1 minute more. Add tomatoes, 1/2 cup water, wine, oregano and salt to skillet.
  3. Cook 10 minutes, stirring occasionally, until mixture thickens. Add shrimp to skillet, cook 2-3 minutes until just cooked through.
  4. Stir in cheese, parsley and 1 Tbsp Ouzo or Pernod (optional for added flavor). Serve immediately.
