Ingredients:
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 2 cup cookeds Brown Rice Penne Pasta
- 1 tablespoon Light Olive Oil
- 2 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
- 4 links Andouille Pork Sausage
- 2 medium (2-1/2" diameter) Onions
Directions:
- In a large skillet heat oil over medium-low heat. Cut sausage into coins. Add sausage and cook 5 minutes, until browned. With a slotted spoon, transfer sausage to a bowl. Slice onions and green pepper.
- Add onions to skillet; cook 5 minutes, until lightly golden. Add peppers and cook 12 minutes, or until tender.
- Meanwhile, cook pasta according to package directions. Drain ,reserving 1/2 cup cooking water, and keep warm.
- Add 1/2 cup cooking water, salt, pepper and reserved sausage to skillet. Stir well; toss pepper mixture with pasta.
