Keto Santa Fe Turkey Meatballs

Ingredients:

  • 2 tablespoons Tap Water
  • 2 tablespoons Heavy Cream
  • 1/2 cup chopped Onions
  • 1 tablespoon Canola Vegetable Oil
  • 1 pound Ground Turkey
  • 1 teaspoon Garlic
  • 1/2 teaspoon Black Pepper
  • 4 slice (1 ounce) Monterey Jack Cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 cup Green Tomato Chile Sauce (Salsa Verde)
  • 1/2 cup Chicken Broth, Bouillon or Consomme
  • 2 tablespoons Organic High Fiber Coconut Flour

Directions:

  1. In a large nonstick skillet, heat 1 teaspoon oil over medium heat. Sauté white onion until softened, about 5 minutes, and set aside.
  2. In a large bowl, soak the coconut flour in water and cream until soft. Mix in turkey, minced garlic, cumin, salt, pepper and onions. Divide mixture into 12 portions, insert a cheese cube into the center of each portion and form into balls (make sure cheese is completely enclosed).
  3. Heat remaining oil over medium heat. Cook meatballs 5 minutes, turning to brown on all sides. Add salsa and chicken broth to skillet, reduce heat to medium-low and simmer, covered until meatballs are cooked through, about 10 minutes.
  4. Transfer to a plate and spoon sauce over meatballs before serving.
