Keto Salsa-Baked Fish Recipe

1 tbsp Light Olive Oil
1 1/2 lb Grouper (Fish) (Mixed Species)
1 cup Salsa
0 1/2 cup, shredded Monterey Jack Cheese
0 1/2 cup Roasted Salted Hulled Pumpkin and/or Squash Seeds
DIRECTIONSThis recipe is acceptable for all phase except the first 2 weeks of Induction doe to the pumpkin seeds.
- Heat oven to 400°F.
- Spread olive oil in a shallow baking pan. Arrange fillets in a single layer. Spoon salsa over fish. Bake fish 8 minutes.
- Spread cheese evenly over top. Bake 2-3 minutes more, until cheese is bubbly.
- Sprinkle with pumpkin seeds before serving.
