Quick Keto Seafood Chowder
Cooking tip: Did you know that you can easily portion out and freeze soup to save for a busy night down the road? When ready to reheat, either microwave or heat up in a pot over the stove with a splash of water.

Ingredients:

  • 1/2 pound Shrimp
  • 4 ounces Blue Crab (Canned)
  • 4 tablespoons chopped Shallots
  • 1 1/2 cups Chicken Broth, Bouillon or Consomme
  • 2 tablespoons Light Olive Oil
  • 3 stalk, medium (7-1/2" - 8" long) Celery
  • 4 tablespoons All Natural Clam Juice
  • 1/8 teaspoon Italian Seasoning
  • 1/2 teaspoon Garlic
  • 1/8 teaspoon Black Pepper
  • 10 ounces Clams (Mixed Species, Drained Solids, Canned)
  • 12 Cherry Tomatoes

Directions:

  1. In a medium pot, warm the oil over medium heat. Add chopped shallot and minced or pressed garlic, sautéing 2 minutes, until translucent.
  2. Stir in the chopped celery, quartered tomatoes, and broth. Add ¼ cup clam juice from the canned chopped clams, and season with Old Bay seasoning, Italian herbs, and pepper. Bring to simmer and cook 3 minutes.
  3. Add shrimp, drained clams, and drained crab, bring back to a simmer of medium heat and maintain a simmer and cook 5 minutes, until the shrimp are firm and pink.
  4. Serve immediately, while warm. One serving is about 1 cup.
