Keto Prosciutto-Wrapped Asparagus

Ingredients:

  • 6 oz, bonelesses Prosciutto
  • 1/8 teaspoon Black Pepper
  • 24 spear, medium (5-1/4" to 7" long) Asparagus
  • 1/4 teaspoon Salt
  • 1 teaspoon Fresh Lemon Juice
  • 1 1/2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Lemon Zest

Directions:

  1. Bring a large pot of lightly salted water to a boil. Add asparagus and cook until crisp-tender, 2 to 3 minutes. Drain and transfer to a bowl filled with ice water, cool about 2 minutes, then pat dry. 
  2. Wrap each asparagus spear with one piece of prosciutto. Place lengthwise on a serving tray.
  3. Juice and zest the lemon. Combine oil, zest, lemon juice, salt and pepper in a bowl; mix well. Coat wrapped spears with dressing. Serve immediately.
