Keto Prime Rib of Beef

Ingredients:

  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 56 ounces Rib Eye Steak

Directions:

  1. Heat oven to 350°F.
  2. Place roast, fat side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer in thickest part. Roast 1 1/2 hours for medium rare (135°F. on thermometer), 1 3/4 to 2 hours for medium (150°F ).
  3. Remove from oven; let roast rest for 15 minutes (to allow juices to redistribute. Temperature of roast will rise an additional 10°F.) Add 1/2 cup water to roasting pan, and scrape up dried-on bits with a wooden spoon; strain.
  4. Serve this alongside the sliced beef. Garnish with diced parsley if desired.
