Keto Portobello-Tofu Breakfast Broilers

Ingredients:

  • 2 tablespoons Extra Virgin Olive Oil
  • 3 tablespoons chopped Scallions or Spring Onions
  • 4 large Eggs (Whole)
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 cup shredded Whole Milk Mozzarella Cheese
  • 1/4 teaspoon Italian Seasoning
  • 6 caps Portobello Mushroom Cap
  • 8 ounces Firm Silken Tofu

Directions:

  1. Heat oven to broil.  Cut Tofu into cubes.
  2. In a large nonstick skillet, heat oil over medium heat add the tofu and diced scallion and cook for about 3-4 minutes until tofu browns slightly.
  3. Add the half of the Italian seasoning and whisked eggs to the pan.  Cook while stirring until the eggs are set.
  4. Meanwhile, place the mushroom caps, ribbed side up. on a foil lined baking sheet. Sprinkle with salt, pepper and additional Italian seasoning and broil for about 7 minutes until they begin to soften and darken in color, turning once. Remove from oven and spoon mixture into the mushroom caps, top with cheese and broil for 1 minute to melt cheese.  Serve immediately.
