Keto Pork with Salsa Verde

Ingredients:

  • 1 cup Cilantro (Coriander)
  • 1/8 cup chopped Onions
  • 1 1/2 teaspoons Garlic
  • 1 teaspoon Salt
  • 1/4 cup Extra Virgin Olive Oil
  • 3/4 fluid ounce Fresh Lime Juice
  • 1 teaspoon Black Pepper
  • 24 ounces Pork Chops or Roasts (Center Rib, Bone-In)
  • 1/2 cup Parsley

Directions:

  1. Preheat oven to 400°F and preheat grill to high.
  2. To make salsa verde: place cilantro, parsley, oil, chopped onion, lime juice, chopped garlic, salt and pepper in a food processor or blender and process, tapping down leaves as necessary, until herbs are finely chopped and sauce looks creamy, about 3 minutes.
  3. Season pork tenderloins generously with salt and pepper and roast in oven for 30 minutes. Remove and place on grill for 5 -10 minutes, turning once, until nicely charred and a meat thermometer reads 160°F.
  4. Let pork rest for 5 minutes before slicing. Serve with salsa verde.
