INGREDIENTS

DIRECTIONS

Use the Atkins recipe to make Old Fashioned Eggnog; you will need one recipe or 6 servings.  If you are in phase 1 do not add the vodka. 
 

  1. When making the eggnog, add 1/8-14 tsp (to taste) peppermint extract.  Crush the mints and put onto a shallow plate.  Set aside.
  2. Melt chocolate and heavy cream in a microwave safe bowl at 30 second intervals, stirring between intervals until the chocolate has melted and is smooth.  Allow to cool slightly then dip each (6) martini glass rim in the chocolate and then the crushed starlight mints.
  3. Add 2 oz vodka to the eggnog and stir to combine.
  4. Fill decorated martini glasses with about 1/2 cup eggnog and enjoy.

Cooking Tip

This recipe is easy to make with the Old Fashined Eggnog recipe... no need to cook it first!  Just be sure it has been cooling in the refrigerator before you are ready to make this tasty beverage for your guests!
